Banana Muffins

Not a fig recipe but I received a bunch of mini bananas from a forum member and was told to post the recipe. This is Chrissy Teigen's famous banana bread recipe and can be found in her second "cravings" cookbook
Ingredients:
2 cups of MASHED very ripe/brown bananas (takes about 6 regular sized bananas, I used about 12 mini bananas)
2 cups of sugar
4 eggs
2/3 of a cup vegetable oil (original recipe calls for canola, I used regular veg oil)
2 cups all purpose flour
1 3.4 or 3.5 ounce box of vanilla pudding mix (don't not leave out!)
1 teaspoon baking soda
1 1/2 teaspoon salt
Optional ingredients: Toasted coconut, toasted nuts, chocolate (I used semi sweet, original recipe calls for dark chocolate chunks), spices (cinnamon ect). I added a couple of non brown ripe bananas (ripe enough to eat, yellow enough to actually want to eat them) because they stayed in chunks even after smashing and left big, delicious hunks of bananas in the muffins)
To bake:
Grease 24 muffin tins or a bread pan
Heat oven to 325 degrees
Mash your bananas, doesn't matter how, I prefer them mashed to a chunky consistency
Add all wet ingredients to a bowl (sugar, eggs, oil, and mashed bananas) Mix well
In separate bowl add all dry ingredients (flour, salt, baking soda, dry pudding mix)
Add dry ingredients to wet ingredients, mix gently, DO NOT OVERMIX
Spoon into muffin tins or bread pan
Cook bread for about 60 minutes until brown or muffins for about 30 minutes until brown (don't know exact time I forgot to set the timer) You'll know they're done when they're a deep brown, but are still cooked when light brown
