Wow. That's pretty cool! I inoculated some logs a couple of years ago with shiitake and oyster, but nothing happened, I think I probably let them get too dry, I don't know much about it but just wanted to try.

What is the next step with the culture you have there?

Looks pretty nice, coming along.  How are they progressing?   I started an agar jar from some store bought Shattaki (Golden Oak) about two weeks ago.  I did a liquid transfer last night and so far so good.  Hoping to make some grain spawn to do some logs.
