Whole Preserved Figs in Syrup

Whole Figs in Syrup

6 cups whole, ripe figs
1 cup water
4 cups white sugar
Dash of salt
Juice of 1 lemon

Step 1. Wash, scrub, and trim stems from figs
2. Add water, sugar, salt, and lemon juice into large pot, bring to boil
3. Add figs to syrup
4. Reduce heat to simmer, cook for 45 minutes to an hour
5. Begin sterilizing jars (add canning jars to hot water and bring to boil)
6. Remove jars from boiling water just before you're ready to use them, put on cooling racks
7. Ladle figs and syrup into sterile jars, making sure figs are covered by syrup
8.  Screw lids on and make sure they are tight and secure
9. Carefully lower filled jars into boiling water
10. Process for 15 minutes, remove jars, allow to cool on racks

I've never used figs preserved except through jam. What are some ways you use whole figs? Are there any kid-friendly ideas you might suggest? What are some of the best varieties to preserve this way?

When processing, is this in a pressure canner or water bath?

My family has always preserved whole figs. Usually eat with biscuits or toast. Bite of biscuit, bite of fig, sop up syrup with biscuit. Yummy.
We use under ripe  Brown Turkey. Under ripe hold together during cooking.

Sounds so good!  I never thought of making a whole fig preserve.  Will have to try, if I get any figs to ripen and become larger than half a dime size.
